Bratwurst Pasta

This one-pan bratwurst pasta is the perfect midweek meal. Our bratwursts are packed with flavour and cook beautifully right in the pan with the sauce, making this a hearty, delicious dish that the whole family will love.


Ingredients

  • 4 bratwurst sausages

  • 400g penne or rigatoni pasta

  • 1 tablespoon olive oil

  • 1 brown onion, finely diced

  • 3 garlic cloves, minced

  • 400g tinned crushed tomatoes

  • 1/2 cup chicken stock

  • 1 teaspoon dried Italian herbs

  • Salt and pepper to taste

  • Fresh parsley and grated parmesan to serve


Method

  1. Cook the pasta in a large pot of salted boiling water according to packet directions until al dente. Reserve 1/2 cup of pasta water before draining.

  2. While the pasta cooks, heat the olive oil in a large frying pan over medium-high heat. Slice the bratwursts into rounds and add to the pan.

  3. Cook the bratwurst rounds for 4-5 minutes, turning occasionally, until golden brown on both sides. Remove from the pan and set aside.

  4. In the same pan, add the onion and cook for 3-4 minutes until softened. Add the garlic and cook for a further minute.

  5. Add the crushed tomatoes, chicken stock and Italian herbs. Stir to combine and bring to a simmer.

  6. Return the bratwurst slices to the pan and stir through the sauce. Season with salt and pepper.

  7. Add the drained pasta to the pan and toss well to coat, adding a splash of reserved pasta water to loosen the sauce if needed.

  8. Serve immediately, topped with fresh parsley and grated parmesan.
