Bratwurst Pasta

This one-pan bratwurst pasta is the perfect midweek meal. Our bratwursts are packed with flavour and cook beautifully right in the pan with the sauce, making this a hearty, delicious dish that the whole family will love.
Ingredients
4 bratwurst sausages
400g penne or rigatoni pasta
1 tablespoon olive oil
1 brown onion, finely diced
3 garlic cloves, minced
400g tinned crushed tomatoes
1/2 cup chicken stock
1 teaspoon dried Italian herbs
Salt and pepper to taste
Fresh parsley and grated parmesan to serve
Method
Cook the pasta in a large pot of salted boiling water according to packet directions until al dente. Reserve 1/2 cup of pasta water before draining.
While the pasta cooks, heat the olive oil in a large frying pan over medium-high heat. Slice the bratwursts into rounds and add to the pan.
Cook the bratwurst rounds for 4-5 minutes, turning occasionally, until golden brown on both sides. Remove from the pan and set aside.
In the same pan, add the onion and cook for 3-4 minutes until softened. Add the garlic and cook for a further minute.
Add the crushed tomatoes, chicken stock and Italian herbs. Stir to combine and bring to a simmer.
Return the bratwurst slices to the pan and stir through the sauce. Season with salt and pepper.
Add the drained pasta to the pan and toss well to coat, adding a splash of reserved pasta water to loosen the sauce if needed.
Serve immediately, topped with fresh parsley and grated parmesan.
