Apple Strudel

There is something truly magical about the smell of apple strudel baking in the oven. This recipe has been one of our absolute favourites for years. It looks impressive, but once you get the hang of layering the filo, it really is quite simple to put together.


Ingredients

  • 2 kg granny smith apples, peeled, cut in quarters, cored and sliced thinly (approx. 2mm)

  • 8 sheets of thick style filo pastry

  • 1/2 cup caster sugar

  • 1/2 cup melted butter

  • 1/3 cup bread crumbs

  • 2 tablespoons of cinnamon powder

  • 1/2 cup sultanas


Method

  1. Line a long baking tray with baking paper taking it all the way to end sides

  2. Spread half the breadcrumbs evenly along the base of the tray.

  3. On a vertical board, place a sheet of filo and brush it evenly with the melted butter. Place the next sheet evenly on top and continue brushing with butter until all filo sheets are layered and buttered on top of each other.

  4. Scatter the remaining breadcrumbs on top of the filo.

  5. Scatter sliced apples on top of the filo, trying to evenly position them to the sides, leaving 2 cm gaps on the top and bottom.

  6. Scatter the sugar and cinnamon evenly over the apples, then spray on a tablespoon of melted butter.

  7. With 2 hands, start to lift the pastry from the side closest to you and roll inwards. Keep rolling and try to hold the apples in place to form a log shape.

  8. Lift the strudel log and place on the prepared baking tray.

  9. Brush the top of the strudel with the remaining melted butter.

  10. Bake in a hot fan-forced oven at 180°C for 50 minutes.

  11. Serve warm, sprinkled with icing sugar. Delicious with cream or ice cream!
